In early November, downtown Boulder welcomed the newest location of The Post Brewing Co. The original Post opened in Lafayette, Colorado in 2014, followed by a second in Longmont and a third in Denver. The Post Brewing Co. Boulder occupies the space at 2027 13th Street, formerly home to Redfish New Orleans Brewhouse, then Colorado Brewing Company, and later Shine Restaurant & Gathering Place.

I’d been to both the Lafayette and Denver locations and was excited to check out the new digs in Boulder. The bar and main dining area is bright, airy and open. Head straight back from the entrance and to the right you’ll find the back room with a full stage for live music events (Tip: don’t miss the Otis Taylor Band LIVE on New Year’s Eve!)

After taking in the new space I was eager to try a glass of Bulky Oxen, a sessionable English style barleywine that The Post’s founding Brewmaster (and current Brewing Ambassador for Dogfish Head) Bryan Selders and Sam Calagione, founder and president of Dogfish Head, brewed together. Bulky Oxen has all the flavor of a heavy-hitting barleywine but with a lower alcohol content, which is good for me because, while I love this style of beer, it isn’t always the best choice given the typically high ABV. But with Bulky Oxen coming in at 7.4% ABV, problem solved!

While The Post is most well-known for its fried chicken and award-winning brews, the food menu offers a wide range of dishes for everyone to enjoy. One thing I love so much about Executive Chef Brett Smith and the entire team is their willingness to accommodate dietary restrictions, allergies, and preferences. On every menu, you’ll find the following statement:

“Vegan, raw, vegetarian, pescatarian, gluten free, dairy free, soy free, paleo. We get it – everybody’s different and that’s cool. Whether it’s an allergy, sensitivity or personal choice, our highly skilled chefs will attempt to make every possible modification to our menu to accommodate you! Certain substitutions/omissions may not be possible…but if you call ahead we will make every possible adjustment.”

As a vegetarian (and a picky one at that), I always feel welcome at The Post when requesting ingredient substitutions/omissions, as they understand that some customers may require (or simply just want) minor adjustments to their meals.

Speaking of meals, I visited The Post Boulder in the afternoon, so I wasn’t extremely hungry but couldn’t resist sampling some appetizers and small plates.

Of course the Donut Holes never disappoint; crispy on the outside, warm and soft on the inside. And the whipped cream with syrup is the best! 

The Kale Salad with beets, goat cheese, and crunchy toasted cashews is a great choice for vegetarians, or anyone looking for something a bit healthier but also big on taste. Every ingredient in this salad blended together so well to create the perfect flavor combination.

The Spicy Pimento Cheese Platter was excellent. With lots of jalapenos throughout, it’s definitely spicy, and you get so many different things to dip in it; the Texas Toast was my favorite. Mmm!

The Post Brewing Boulder serves lunch Monday-Friday at 11am, dinner nightly at 4pm, and Saturday and Sunday brunch starting at 10am. And happy hour Monday-Thursday 4-6pm with food, beer, and cocktail specials.
