The 4am Cookies AKA Quick Cookies Recipe!

On a very late night at around 4am I suddenly got a strange hankering for some cookies.

Of course, most normal people would just try and forget it and go to bed but me?

I had to make some!

I walked into the room at around 4:20am, a batch of warm cookies with oozing melted chocolate, crunchy on the outside and soft on the inside ready to eat!

My husband was sleeping, naturally, as you should be, and I innocently asked if he’d like a cookie.

Not one to turn a cookie down in many circumstances he accepted in a half comatose state.

I thought he might just fall asleep again, cookie in hand but he ate it, as if in a pretty delicious dream!

So if you need a cookie in a hurry, these are certain to please!

Usually self raising flour isn’t used in biscuits but with these it is essential for getting that crispy edge and chewy gooey centre!

Instead of the traditional chocolate chip, I used a chocolate bar that I chopped up, each square into three, which made such lovely melty chocolate chunks I would recommend it over chips!

Quick Cookies

Quick Cookies
Makes 12

Ingredients

100g granulated sugar
100g butter
150g self raising flour
1 tablespoon golden syrup
50g chocolate chips, raisins, peanuts etc..
1 teaspoon vanilla essence
Pinch of salt

Method

Preheat the oven to 180oc.

Cream the butter and sugar together until light coloured and creamy.

Add in the golden syrup, salt and essence, mixing to combine.

Add your filling of choice and stir to distribute evenly.

Add in the flour, gradually, stirring in half until fully combined before adding the other.

When combined into a dough, take tablespoons of the mixture and place them on a baking tray with space between each.

The mixture will make about 12 cookies and no baking paper is needed!

Place them in the middle position in your oven and bake for 10-15 minutes, until they are golden brown!

When cooked, leave on the tray to cool for about 5 minutes before transferring them to a cooling rack or devouring them!!
