So you've got left over pork. Maybe this is the third night leftover pork is a viable menu option. Its okay, I'm not judging, how do you think I came up with this dish? Anyway, the last thing you want is to have the same pork, in the same way. Again. Probably your significant other and the kiddos are thinking the same thing, "pork again?"
Well here's what you do. Depending on the type of pork you have, you can either dice it, thinly slice it, or pull it into strips.
You'll need:1 can of diced tomatoes1 cup penne pasta2 tlbs butter1 clove garlic2 tsp basil (fresh if you've got it) Once again, not judging.1 cup Chopped spinach (fresh/frozen you choose)1 cup chopped, diced, or pulled pre-cooked pork
Start off by getting the water for your pasta boiling.Once the water is boiling toss in your pasta and stir occasionally to prevent sticking.
While your pasta's cooking, preheat a skillet or sauce pan. Finely chop garlic while your sauce pan is heating.Toss in the butter and garlic.Once your garlic is starting to sizzle and brown, pour in the tomatoes and basil and stir. Let this simmer on medium heat for about 5-7 minutes. Add your pork and let simmer for another 2 - 3 minutes on low heat.
In a separate skillet sauté the spinach in a lightly oiled (olive oil or butter is fine) pan. This takes about 3 -5 minutes. Remove from heat.
By now your pasta should be done. Strain and begin to mix pasta 1 large spoonful at a time until all is mixed.
Garnish with spinach when ready to serve.
This makes about 4 servings
