Every day making dinner for the dudes is like a box of chocolates, you never know what you're going to get.
It usually starts with the rummaging of the refrigerator, rifling through cabinets, and poking in the storage pantry.
I'm terrible at preparing for meals so I never have anything defrosted. Lucky for me, Clueless Dad does most of the cooking, so there's usually some kind of roast laying around for me to use.
My mission, if I choose to accept it, is usually making side dishes.
One of my favorite side dishes to make is mashed potatoes.
Mashed potatoes are super easy to make and don't take much ingredients, but I like to get a little creative with mine.
You'll need:
2-3 large white potatoes
1 tspn salt
1 tspn black pepper
1 tsp garlic powder
1 tbsp chives
2 tbspns cream cheese
2 tbspns butter
1 tbsp milk
Peel and rinse potatoes before cooking (you can leave the skin on if you want). Slice the potatoes thinly. You can use a steam pot (my preference) or a regular pot of water.
Bring pot a of water to a boil and add in the potatoes. Allow to boil for about 25 minutes or until soft. Once the potatoes are soft, remove from heat and drain water.
Place the potatoes in a large bowl. Add the butter, milk, and cream cheese. Mix together with a large spoon (lumps are okay). Once completely mixed, add in the 1/2 tbsp chives and the remaining dry ingredients. Mix together slowly, but be careful not to over mix.
Serve immediately, and lightly sprinkle with the remaining chives for garnish.
