Tasty Treats Recipe: Giant Cookie Cake

I love to bake, and whenever there’s a birthday in my family I’d usually bake a sweet spongy cake or a tray full of butterfly cupcakes to celebrate the occasion. However, last week was my lovely sister’s birthday and I wanted to make something special for her, but she has a massive dislike for sponge cake. In fact, I’ve never seen her eating so much as a swiss roll or iced bun, so I knew I’d have to be resourceful in making her a birthday day.

So here’s my solution: a Giant cookie! And importantly - 2 giant cookies stacked up to make something that looks like a birthday cake but is definitely a cookie texture and taste!

I used a recipe similar to a Millie’s cookie in order to get a biscuit which is crisp on the outside but still doughy in the middle (so that it can at least be cut into slices like a birthday cake!). The cookie dough is made by creaming together 125g butter with 125g caster sugar and 100g soft brown sugar before adding 1 egg, 1 tsp vanilla extract and 225g self-raising flour and a half tsp of salt.

Instead of dividing the mixture into 12 cookies, I put half into a greased loose-base cake tin and added my ‘toppings’ – cherries & chocolate in the bottom layer and on the second ‘cake’ I added rainbow sprinkles plus more chocolate! I baked both giant cookies for around 15 minutes (the small cookies take only 7 minutes) until it was golden but still gooey in the middle. I turned them out and let them cool for a bit before stacking them up and icing ‘Happy birthday’ on the top cookie. And I think my sis was happy with her giant birthday cookie – I certainly enjoyed it anyway!
