Tasty & Simple Baked Eggs with Cheese Recipe!

I love a good egg!
There’s a bit of a love/hate relationship I’ve noticed with eggs, some can’t stand them, some love them!

I’m on the love side with eggs, there’s so much that can be done with them, but it can be hard to get them exactly as you like them.

Poached eggs are a difficult one to get right every time, boiled eggs are quite easy but all of that peeling can be annoying to say the least, especially when you accidentally take half of the egg white with the peel!
Fried eggs are another which are quite easy but can very easily over cook and end up with a hard yolk before the white has cooked to your liking.

I decided to give baked eggs a go and found that I had missed a trick all these years!

The recipe is so quick it’s barely a recipe at all and it is so easy to serve many people in one go this way, you just need one egg and one ramekin per person!

I created a take on ham, egg and chips with pork and baked eggs instead of fried ones and it was delicious!

You can even adding fillings like cooked mushrooms or bacon, even chicken before you break in the egg for an even tastier treat.

For these, I sprinkled over a grating of cheddar cheese which melted in perfectly! You can even add grated cheese from frozen for a really quick morning snack.

Simple Baked Eggs Recipe

Simple Baked Eggs
Serves 2

Ingredients
Butter for greasing
2 free range eggs
Salt & pepper
2 tablespoons grated cheese (optional)

Method
Preheat the oven to 220oc

Take 2 ramekins and grease them with butter.

Crack an egg into each and season with plenty of salt and pepper.

Sprinkle over the cheese if desired and place on a baking tray.

Place in the oven for 8-10 minutes until cooked to your liking.

Enjoy!
