I hope you are having a nice Easter break! The weather is slowly transitioning here and cooler days have been inviting us to do some sweet baking. From this apple cake here to this ‘Sweet Zucchini Bread’ full of enchanting beautiful aromas. I know I’ve shared a few gluten-free recipes of bread and cakes here in the past too but this one is extra special for me since I was able to make a video-recipe to show how easy it is to incorporate brown rice flour into your baking. Brown flour is made from whole grain and is highly nutritious, has a lot of fiber and it also has a mild-nutty flavor that goes perfectly well with this type of sweet bread.
And before I send you off to watch the video and make a loaf of delicious Zucchini Bread, let me remind you that this recipe is completely gluten-free, lactose-free and incredibly simpler to make. You can also make this into muffins as well and serve with some whipped coconut cream!
And if you have never tried this type of baking using gluten-free flours but you’re feeling the need of starting to incorporate more nutrients into your baking and you’re somehow struggling on how-to do so I encourage you to not be afraid of trying baking without using regular flour or milk, because is just as good! SWEET ZUCCHINI BREAD RECIPEgluten-free & lactose-free 1 Loaf
2 C. Brown Rice Flour, sifted
1 1/2 tsp. Baking powder
1/4 tsp. Baking Soda
2 Medium Eggs
1 tsp. Vanilla essence
1/2 C. Water
3 Tbsp. Sunflower oil
1/4 C. Honey or to taste
1 1/2 C. Zucchini, shredded
Preparation:1- In a bowl add all dry ingredients; flour, baking powder, and baking soda. Mix well.
2- Add eggs, vanilla essence, water, oil, honey, and shredded zucchini. Mix until all ingredients are well incorporated.
3- Transfer mixture into a baking dish and bake for 35-40 minutes to a 180c oven.
4- When ready let it cool and sprinkle with some powdered sugar if you'd like. Cut into slices and serve!
