Sweet Potato Bun with Cheese Topping/ Straight Dough Method
I like this recipe as the added sweet potatoes do make the different to the bread texture. It gives soft fluffy buns. Not forgetting the natural bright purple color. With the brown cheese topping sure add bonus to these sweet buns.
Sweet Potato Bun with Cheese Topping/ Straight Dough Method
Adapted from My Little Space Sweet Potato Bun with Cheese Topping/ Straight Dough MethodIngredients :(A)350g bread flour2½ tablespoon sugar1¾ teaspoon instant yeast½ teaspoon salt

(B)150g mashed purple sweet potato100ml warm milk1 egg, do not beat(C)70g cold butter, cubed

* 1 beaten egg yolk for glazing* About 1 cup  grated cheddar cheese & some sugar for topping
Method :1. In a mixing bowl mix together mashed sweet potato, milk and egg. Follow by flour, sugar, yeast and salt. Knead till form soft dough.
2. Add in butter and continue kneading till reach elastic stage. Cover and leave the dough to rest for an hour or till double in size.
3. Once ready, punch dough to release extra air and transfer to working station. Divide dough into 16 portions (about 50g each). Shape each into a ball then place into 9" greased pan, again let to rest for 45 minutes or double its size.
4. Brush on egg glazing. Scatter shredded cheese on top and sprinkle with sugar. Bake at preheated oven 160'C for about 20-25 minutes or till brown.
