So you have to find ways to make their lunch look appetizing and taste delicious as well. That’s the kiddie part, but you also have to consider the Mom part – proper nutrition! Today’s sweet corn fried rice ticks all these boxes!
Sweet Corn Fried Rice
Ingredients:
- 1 cup cooked, long grain rice
- 1/4 cup boiled sweet corn kernels (I boiled them in the microwave for 4 minutes)
- 1 small onion, finely chopped
- 2 tablespoon green bell pepper, diced
- 2 tablespoon red bell pepper, diced
- 1.5 – 2 tablespoon ghee
- Salt to taste (optional)
- Black pepper to taste
Instructions:
1. Heat a pan and add ghee to it. Add chopped onions and saute for 1 minute.
2. Add colored bell peppers and stir fry on medium to high flame for few seconds.
3. Now add boiled sweet corns.
4. Season with a little salt and toss the veggies for another one minute on medium flame.
5. Now add the cooked rice .
6. Mix well to toss the rice with veggies and stir fry for 1- 2 minutes.
7. Lastly, add freshly crushed black pepper, toss and turn off the flame. Serve the rice plain or with some raita.
