Blueberry Buckle -
This week’s Foodie Friday recipe is a sweet treat just in time for blueberry season! This delicious treat is a fun dessert variation for your next event. Enjoy!
Ingredients
- 2 cups Cake Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground Ginger
- 2 ounces Unsalted Butter
- 3/4 cup Sugar
- 1 Egg
- 1 cup Whole Milk
- 3 cups Whole Blueberries
Note
Sprinkle some nutmeg on top of the baked cake for a tasty addition.
Directions
Step 1
Preheat oven to 375 degrees and spray 9×9 inch glass pan with cooking spray.
Step 2
Whisk together flour, baking powder, salt, and ginger.
Step 3
Blend together butter and sugar on medium speed for about 1 minute, or mixture is fluffy. Add the egg and beat about 30 seconds, until combined.
Step 4
Add 1/3 of the flour mixture and blend on low speed until combined. Add 1/3 of milk and blend on low speed until combined. Continue alternating between flour mixture and milk until all is combined. Stir in blueberries.
Step 5
Pour mixture into pan and bake for about 35 minutes, or until golden brown. Allow to cool for 10 minutes before serving.
