I told you I'd have chocolate on the blog soon. Beware: this chocolate peanut butter fudge is very rich and very fudgy. The following recipe is not for the faint-hearted! I love dark chocolate, so when I bake that is always my chocolate of choice. I got the recipe from Dashing Dish, but didn't follow all of her recipe exactly, hence I'm calling them "super skinny" instead of just "skinny."
For my Super Skinny Chocolate Peanut Butter Fudge, you will need:
~2 oz. dark chocolate
1/4 cup Better'n Peanut Butter. This peanut butter only has 100 calories per 2 tbsp, and 2g of fat! Now do you see why these are super skinny?!
1 package (8 oz.) reduced fat cream cheese
2 tbsp Hershey's Dark Chocolate cocoa powder
1 cup sweetener of choice (I use Stevia)
2 tbsp Better'n Peanut Butter for drizzle topping
Melt the chocolate in the microwave for about 30 seconds, or until melted. Stir the peanut butter with the melted chocolate and then add the cream cheese. Stir the ingredients together and put back in the microwave for another 30 seconds. Stir the mixture until it's smooth and creamy. Add in the cocoa powder and sweetener and use a spatula to mix until everything has combined.
How you choose to plate your fudge for cooling is up to you (and what you have on hand). Dashing Dish recommends using a loaf pan and spraying with non-stick cooking spray, but I couldn't find the right kind of pan in my kitchen so I had to improvise. Instead, I lined tupperware with aluminum foil and spooned the mixture right onto the foil. Use the spatula to smooth it out and put in the freezer for about 10 minutes. During this time, you can prepare your peanut butter drizzle. Melt about 2 tbsp of Better'n Peanut Butter in the microwave for about 30 seconds or until melted. Take your fudge out of the freezer and using a fork or spoon, drizzle the melted peanut butter on top. Put the fudge back in the freezer for about 15 more minutes, or until the drizzle has firmed up. Once it's cooled, cut it into small squares and keep in the freezer until you're ready to serve.
I say to keep it in the freezer instead of the refrigerator because the texture of this fudge is unlike any other. I put it the refrigerator to cool and it was still very soft even after a day. So I moved it to the freezer to let it firm up. Chocolate and peanut butter is one of the best flavor combinations; whoever came up with it is a genius. But desserts of this kind are often extremely high in fat and calories; luckily this fudge is so low-fat, you can indulge with absolutely no guilt!
