I love-making scones, as they are so versatile and quick to make. Sundried Tomato & Parmesan Scones are a great little savoury party addition. Perfect bite size portion with great italian flavor.
Nothing beats trying a warm scone!
Ingredients
225g Self Raising Flour
75g Butter
1 Egg
2 Tbsp Milk
50g Parmesan Cheese
2-3Tbsp Chopped Sundried Tomato
1 Tsp Oregano & Parsley
Milk for glazing
In a food processor add cold butter and flour
Blitz in until bread crumb like texture and add to a bowl. Sprinkle on the parmesan cheese.
Add parsley and oregano to the mixture
Beat an egg with milk and then pour into the butter flour mixture.
Briefly mix until the start of a dough forms.
Add sundried tomatoes into the dough, start to mix into the dough on a floured surface
Continue to knead until a dough forms, do not over knead.
Roll out and then using a cutter, cut out scones
Place the scone dough onto a greased baking tray
Brush the scone dough with a little milk
Bake in the oven at 220c for 15 minutes until golden brown.
