Stuffed Peppers Recipe
I'm pretty sure quick and easy recipes are my love language. I just really appreciate a meal that can be made in minutes that is still healthy and delicious. Lately I have been really craving stuffed red peppers, so I finally did something about it. While I was shopping at my local Kroger Family Store, I came across Uncle Ben's® Long Grain & Wild Rice Fast Cook Recipe and decided that plus my red peppers were going to be dinner. It was just what I needed too- lots of vegetables, protein, and good grains. The recipe is simple and doesn't really have a right or wrong; you can add or take away any of the vegetables to cater to your personal taste. Plus, this recipe makes quite a bit (feel free to adjust to fit your quantity needs), so it's perfect for a family meal.
Stuffed Peppers Recipe
Ingredients

1 box Uncle Ben's® Long Grain & Wild Rice Fast Cook Recipe

1 lb Ground Beef
1 Onion
1 Zucchini
1 Yellow Pepper
1 Orange Pepper
4 Red Pepper
1 tbsp Coconut Oil
Mozzarella Cheese
Greek Yogurt
Directions
Preheat the oven to 350°. On a cutting board, chop your onion, zucchini, yellow pepper, and orange pepper. Place the chopped veggies in a large frying pan, add the coconut oil, and let the vegetables cook over medium heat- string occasionally. In a separate frying pan, brown the ground beef. Once the vegetables and beef are almost done, start cooking your rice following the directions on the box (Add rice, water, and seasoning packet to a large pot. Bring to a boil then reduce to a simmer for 5 minutes. Remove from the heat and let it sit until the water has absorbed.)
Once your rice is done, add the vegetables and beef to the pot and stir it all together. Slice your Red Peppers in half and clean out the seeds. Fill the peppers with the hash and top with mozzarella (or your choice of) cheese. Place on a baking sheet and bake in the oven for 5-7 minutes or until the cheese has melted completely. Serve with a tbsp of Greek Yogurt.
