I made strawberry mint sorbet yesterday, and it’s already half gone. Thanks to everyone for the sorbet flavor suggestions! I originally intended to make watermelon mint, but saw this recipe and changed my mind.

I’d say this sorbet is so much better than the lemon one from a couple weeks ago. It’s creamy, and the mint adds a lot of depth to the flavor. And guess what? You only need 5 ingredients to make this! (Well, technically 6, if you decide to put that teaspoon of vodka into it).

Strawberry Mint Sorbet (from The Baker Chick)
makes 1 pint

1 lb. Strawberries washed and hulled
1/2 cup mint leaves
1 tsp. Kirsch or Vodka (both are optional though)
1 tsp. freshly squeezed lime or lemon juice
3/4 cup sugar
Pinch of salt

Slice the strawberries and toss them in a medium bowl with the sugar and liquor, if using, stirring until the sugar begins to dissolve. Cover and let stand for an hour, stirring every so often.

Puree the strawberries and their liquid with the lemon/lime juice, mint leaves and salt in a blender or food processor until smooth.

Chill the mixture thoroughly, then freeze it in your ice cream maker according to the manufacturer’s instructions.

This is one of the best sorbets I’ve ever had. I couldn’t put my spoon down! I am still wondering what watermelon mint would taste like, though!
