By now it's no secret that I love a simple recipe. Basic ingredients mixed with some creativity is all I need. Today's recipe was inspired by one of my favorite past-times, a tea party, but while the final product might seem tea-party-fancy, the process to make it is not. That's the beauty of simple baking- the outcome is beautiful and the process is quick.
I wanted to share my family's favorite and quick cake mix cookie recipe, but I also wanted to jazz it up with a trick I learned from one of my first roommates. Using the new Pillsbury Purely Simple Cake Mix and Frosting products from Target, I was able to make these Strawberry Glaze cookies in just a few minutes. Bonus- the Pillsbury Purely Simple products have no artificial flavors, colors, or preservatives!
Ingredients
1 Purely Simple White Cake Mix
1 Purely Simple Buttercream Frosting Mix
1 cup Strawberries
2 eggs
1/2 cup butter
1/2 cup oil
Cookies- In a bowl, mix the eggs and oil together with the cake mix until it reaches the consistency of cookie dough. Roll into balls and bake on a cookie sheet at 350° for 8-10 minutes.
Glaze- Using a potato masher, mash the strawberries until they reach the consistency of jam. Soften the butter in the microwave until it is almost melted then pour into a bowl with the strawberries and cake mix. Mix together until well blended and if necessary, add the 1/2 cup of water that the frosting recipe calls for.
Place the cookies onto a plate and coat with the frosting. The frosting should be a thick consistency when cool, but you will want to warm it up for a few seconds in the microwave so it melts enough to drizzle onto the cookies or coat them completely; when it dries on the cookie, it will harden like a glaze.
