Strawberry Cupcakes with Strawberry Buttercream Icing
These cupcakes are part of my gift to my girls, for Valentine’s Day. Strawberries are Baby A’s favorite fruit, Baby B doesn’t like strawberries. Just as I love bananas, but do not like banana pudding, Baby B loves strawberry cupcakes. So I thought it was something quick and simple I could make for my girls for a Valentine treat. They have been doing so great in their first year of school that they truly deserve these and more. They were very happy to see these and to know they were staying! J

Ingredients1¼ cups plus 2 tablespoon all-purpose flour
1¼ teaspoon baking powder
¼ teaspoon salt
1 cup sugar
2 ½ tablespoons strawberry gelatin
8 tablespoon unsalted butter, at room temperature
2 large eggs
½ cup milk
1½ teaspoon vanilla extract
¼ cup sweetened strawberry puree
*To make the strawberry puree, process partially thawed frozen strawberries with a bit of sugar in a blender or food processor until smooth.
Preheat the oven to 350˚ F.  Line the cupcake pan with cupcake liners.  In a small bowl, combine the flour, baking powder and salt; sift together and set aside.  Combine the sugar, strawberry gelatin and butter in a large bowl and beat on medium-high speed until light and fluffy, about 2-3 minutes.  Beat the eggs into the sugar mixture one at a time, mixing well after each addition.  Add half of the dry ingredients to the batter and mix just until incorporated.Mix in the milk and vanilla extract.  Add in the remaining dry ingredients, mixing just until incorporated.  Blend in the strawberry puree.Pour the batter into the cupcake pan (I use a medium size ice cream scooper) and bake, rotating halfway through, 20-25 minutes or until a toothpick inserted in the center comes out clean.  Transfer to a wire rack to cool before icing completely.
*makes 18 cupcakes*
Strawberry icing2 cup of shortening1 stick of unsalted butter, room temp. 1 teaspoon of strawberry extract4 cups of powdered sugar4 tablespoons of cream or milk
Beat the butter and shortening together for about 2 minutes. Mix in the strawberry flavoring. Add 2 cups of powdered sugar and beat for about 1 minute. Add two tablespoon of milk or cream and mix until combined add the last two cups of the sugar and mix until combined then add the last two tablespoons of milk or cream and mix until smooth.
** add more milk or cream if needed but I suggest 1 tablespoon at a time. **
I had left over frozen strawberries so I added them on the top of the cupcake just for heck of itJ.
