My mom’s favorite cocktail is a good White Russian. In fact, I remember the first time I went to a Bat Mitzvah with the whole family, as a legal 21-year-old, sitting with her at the bar trying to decide what to order. Mom got a White Russian; I think I ended up with a Fuzzy Navel or something fruity, but she did suggest her drink of choice. I refused because I knew how freaking caloric they are if you get them out at a bar. Normally, they’re made with cream, but I lightened ours up by using skim milk. It’s still mostly vodka and Kahlua, with really only a splash of the milk, but whatever…it’s still light, okay?! Actually, now that I think of
it,this would have been really yummy with some vanilla almond milk instead...After devouring forkful after forkful of Quinoa Salad, Sesame Glazed Cauliflower, and of course nibbling on bread and cheese, along with a glass or two of wine, we were kiiiind of on the stuffed side. So, even though I made “Skinny” White Russians, neither one of us made much of a dent in our glasses. But hey, we still made ‘em, and savored afewsips in honor of Sochi.

Skinny White Russian
Makes 1 drink
2 ounces vodka
2 ounce Kahluaskim milk
Fill a rocks glass with ice and build the drink directly in the glass. Pour vodka, then Kahlua and stir very gently. Top with a splash of milk.
