Simple Tomatillo Avocado Salsa

Here is a simple Tomatillo Avocado Salsa you can make in your blender in just minutes with only a few ingredients. It's bright and zesty and is the perfect dipping sauce for my Mashed Potato Taquitos!

A really good salsa can add a little zip to any dish. But salsa doesn't have to mean tomato, in fact, they're cousins the tomatillos can make a really good salsa too.

Tomatillos are those little tomato-looking things you see in the grocery that have a papery husk on them. Although both are related to the nightshade family, tomatillos do NOT taste like tomatoes.

Instead, they offer a bright, citrusy flavor and pair wonderfully with chiles, avocados, and cilantro to make this creamy Tomatillo Avocado Salsa.

Tomatillo Avocado Salsa Ingredients

For this recipe, you will need the following ingredients

  • 4 or 5 tomatillos, husks removed and rinsed (about 9 oz worth)
  • 1 large, ripe avocado
  • 2 cloves of garlic
  • the juice from ½ a lime
  • a handful of cilantro (as much or as little as you like)
  • And some sort of chile pepper

I had some authentic Hatch Green Chile in my freezer and ended up using 3-4 chiles, but I like spicy. If you like it mild you could use a 4oz can of canned green chiles. Or if you want something in between you could use ½ a jalapeno.

I quartered the tomatillos and then chucked everything into my blender. Start slow until everything starts to break up, then turn up the speed and blend it to whatever consistency you like.

Give it a taste and add more cilantro, lime, or chile until you get it just the way you like it.

Simple, fast, and very few ingredients, all of which happen to be whole foods, nothing processed.

As I mentioned, I used this as a dipping sauce for my Mashed Potato Taquitos but it can also be used on baked potatoes, fries, tacos, burritos, or whatever you like.

Perfect for days like today where it's just too hot to cook!

Ingredients

  • 4-5 tomatillo, about 9 oz
  • 1 large, ripe avocado
  • Choice of green chiles - depending on how spicy you like it
    • 4 oz canned green chiles (mild), or ½ jalapeno pepper (med), or 1 serrano pepper (hot)
  • 2 cloves garlic
  • handful of cilantro
  • juice from ½ lime

Instructions

  1. Remove husks from tomatillos and rinse well
  2. Cut them into quarters and add to your blender
  3. Cut your avocado and remove the pit
  4. Add avocado, garlic, cilantro, and lime juice to blender
  5. Blend until smooth
  6. Optional:  Add some finely diced white onion as garnish
