Simple Summer Supper | India Cooks

India CooksThis is the easiest simple supper dish, it’s so delicious and light and is beautifully summery. To serve three people all you need is …  two courgettes (preferably organic, more tasty) / an avocado / one lemon / a square of feta / fresh mint / olive oil / cherry tomatoes and lettuce. Now I do know everyone has been enjoying this courgette spaghetti malarky for quite a while and even the name “Coodles” has come about and used regularly. I however, like to peel my courgette so it’s a bit more like Fettuccine. I also like to eat it warm rather than the popular raw version, so have my steamer ready to steam my Courgettini. I think the name could catch on equally as well as “Coodles”. Let’s begin, and the great thing about this dish is that it hardly takes any time and you could probably add whatever is in your fridge which is what I first did. 1 – First peel your courgette and chop off the heads and bottoms and continue to strip away until you reach the seedy middle and then stop.
