Sabudana (Sago) Khichdi

Sabudana Khichdi is a popular vrat recipe, with no onion and no garlic. It can be serve as a tea time snack also. It is very easy and quick to make. 
Sabudana (Sago) Khichdi 
Serving : 1
Preparation time : 1-2 hour soaking time
Cooking time : 10-15 mins
Ingredients :

Sabudana / Sago : 1 cup

Potato (Boiled, peeled and cubed) : 1
Green chilli (Finely chopped) : 1/2 tsp
Cumin seeds : 1/2 tsp
Peanuts (roasted and crushed) : 1-2 tsp
Black pepper powder : 1/4 tsp
Ghee : 1 tbsp
Lemon juice : 1-2 tsp
Salt (sendha namak) : to taste
Pomegranate seeds : for garnish
Coriander leaves : for garnish
Method :

1. Wash sabudana till water clears. Soak in water just enough to immerse the sabudana for about 1-2 hour.
2. Drain in a colander, then spread over a thick cloth. It is important for the water to drain out well. The sabudana should be soft and fluffy. 
3. Heat ghee in a non-stick pan, add cumin seeds and green chillies. 
4. Add boiled-diced potatoes, saute them well. Cook for a minute.
5. Add roasted and crushed peanuts. Mix it well.
6. Finally add sabudana, salt, black pepper powder and lemon juice. Mix it gently.
7. Garnish with coriander leaves and fresh pomegranate seeds.

Handy Notes :

# As the sabudana cooks, it turns transparent. Make sure all the sabudana gets cooked. 

# It is very important to soak sabudana for at-least 1-2 hours.
