S’mores Surprise Cookies

S’mores surprise cookies

When I saw this recipe on Sugar & Cloth last month, and my mouth started to water. The pictures were super cute, and the recipe was irresistible. Who can pass up a cookie with a s’more in the middle?

I made them for a 4th of July cookout, using this recipe from Giada for the cookie dough. For the record, it would’ve been a lot faster to just use pre-made dough from the grocery store!

After making the dough, I let it chill in the freezer for 20 minutes. Then I used a tablespoon to dole out mini scoops of dough onto a cookie sheet. Next, it was time to assemble the s’mores.

How’d they turn out? Good and bad. They tasted wonderful. The dark chocolate cookies weren’t too sweet, and balanced out the sugar in the s’mores. And fresh out of the oven, the chocolate and marshmallows were still gooey and delicious.

The cookies didn’t all look so pretty, though. A lot of the cookies toppled over in the oven because I made my s’mores too tall. So note to self: next time, slice the marshmallow super thin, and consider using only one graham cracker. Either that, or use more cookie dough!

Regardless of how they looked, everyone at the cookout really enjoyed them. They’re a great way to celebrate summer!
