Roasted Pepper Dip

Ingredients:
2 Small onions
2 Garlic cloves
8-9 Sweet bite orange and yellow peppers
1 Tsp mixed herbs
Juice of 2 lemons
2 Tbsp balsamic vinegar
2 Tbsp water

Roughly chop the onions and peppers and place on to a lightly oiled oven pan. Add peeled garlic and sprinkle on the mixed herbs.

Bake in the oven at 220c for about 20-25 minutes until deep down and roasted

Once the veggies have cooled slightly spoon into a blender. Add lemon juice, vinegar and warm

Blend until smooth

Enjoy with pitta, nachos or even chips!!
