Red Velvet Krispie Roll

This Red Velvet Krispie Roll is an easy and tasty treat for kids to both make and enjoy.
Instead of making Krispie treats into squares or other shapes, why not make a festive log, which can be sliced up? It looks very Christmassy with its red and white swirls.

To emulate Red Velvet flavor in the krispies. I added vanilla extract and cacao powder. The food colouring I used is red extra – this gives the brightest red possible I find and is perfect for Red Velvet Cake. But also this Krispie roll.
As for the filling, I used some reduced sugar Dream Topping. Yes, it’s artificial but it’s also very retro taking me back to Christmases of old when Dream Topping was the order of the day on your trifle.

As I say, it’s really easy to do and with a bit of supervision you could let the kids loose on this. Here’s how it’s made.
Yield: One Log
Ingredients:180 grams mini marshmallows30 grams unsalted butter1 teaspoon vanilla extract1 tablespoon raw cacao powder (or unsweetened cocoa)Red Food Colouring (amount will vary)125 grams puffed rice cereal1 pack of Dream Topping, prepared as directed or 200ml double cream, whipped
Method:Line a baking sheet (approx. 9”x13”) with greaseproof paper.
In a large saucepan place the butter and mallows and melt over medium-low heat. Once melted stir in the vanilla and cacao powder. Lastly add the red food colouring until you get a shade that you like.
Add the cereal and stir thoroughly until everything is red. Place on the baking sheet and with a lightly greased spatula press down to an even layer, right to the corners. Allow this to set for at least two hours.

Prepare the Dream Topping or whip the cream until stiff. Spread over the top of the cooled krispies and using the greaseproof paper underneath as a guide, gently roll the krispies from the short end. Mop up any excess cream that squishes out as you go along.
Roll it tight in the paper and allow to chill for about an hour.
That’s it! To serve use a sharp knife to slice through the roll. It’s squidgy, fun and festive. Enjoy!
