Hubs favors brownies without frosting, but I love them frosted. This recipe? Well, hubs (and the neighbor girls next door) agreed that these are awesome.

This red dessert can work for more holidays than just Valentine’s Day! Would these Red Velvet Brownies not be a great take-along for Christmas or even the Fourth of July? Recipe instructions slightly tweaked from the How Sweet it is Blog.

Only need an 8 x 8 pan of brownies? Simple halve the brownie recipe. Grease and flour an 8 x 8 pan instead--but watch your oven. You don't want to over-bake these lovelies!

I would, however, encourage you to bake a bigger batch and share with those around you. Who doesn't like and appreciate homemade baked goods?

Ingredients

  • 6 Tablespoons Unsweetened Cocoa Powder
  • 2 Oz (4 Tablespoons) Red Food Coloring
  • 4 teaspoons Vanilla Extract
  • 1 Cup Butter or Margarine, Softened
  • 3 Cups Sugar
  • 4 Eggs
  • 2 1/2 Cups Flour
  • 1/2 teaspoon Salt
  • White Chocolate Frosting
  • 1/2 Cup Butter or Margarine, Softened
  • 2 1/2 Cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 4 Oz White Chocolate, Melted (I used Almond Bark)
  • 1 - 2 Tablespoons Heavy Cream (I used French Vanilla Coffee Cream--you could also use Milk)

Instructions

  1. Stir together Cocoa Powder, Food Coloring, and 3 teaspoons Vanilla in small bowl.
  2. In KitchenAid bowl, beat together Butter and Sugar until fluffy (two minutes).
  3. Add Eggs one at a time, beating well after each addition.
  4. Mix in 1 teaspoon of Vanilla Extract.
  5. With Mixer off, add in Cocoa Powder mixture.
  6. Beat (on medium) until uniform in color.
  7. Add in Flour and Salt. Do Not Overmix!
  8. Pour into greased and floured 13 x 9 pan.
  9. Bake 30-45 minutes or until toothpick in center comes out clean. Be VERY CAREFUL you do NOT over-bake these brownies!
  10. Cool on cooling rack before frosting.
  11. For White Chocolate Frosting
  12. Melt Chocolate.
  13. Meanwhile, cream Butter and Vanilla Extract until fluffy.
  14. Add in Cream, Milk, OR Coffee Creamer.
  15. Mix in Powdered Sugar 1/2 Cup at a time.
  16. Add in Melted Chocolate.
  17. Beat until Frosting reaches your desired consistency.
