With the return of the Great British Bake-off, in celebrity from, (what could be better?) and a friends birthday on the horizon, I felt inspired to do a spot of baking myself. I opted for a simple Red-Velvet cake but as I wanted to make it look a little more impressive I doubled the quantities to get three layers. That plan didn't quite work out, hard as I looked I couldn't find anymore matching baking tins and bases, so I had to make do with two tiers instead, but I hope you agree that the finished result looked rather spectacular anyway!
I used this recipe, which I have given the link to because I think it's nice to support other blogs, and it was absolutely perfect! The cake was so moist and everybody loved it. I would say though, don't double it like I did unless you know that there will be a lot of people eating it; the cake that I made was definitely too big and the slices cut had to be like tiny slivers! I would also say it's probably a good idea to use more red food colouring than the recipe calls for, as mine didn't exactly turn out red. But you live and learn, eh? 
Overall this was a really successful bake and a recipe that I will definitely use again in the future for special occasions! What have you been baking recently?
