Hellooo shimmers,
I have been baking this week. My brother has been in Japan for three weeks and so I thought it would be a good idea to make him a cake to welcome him home.
I love making a Victoria sponge cake and he loves eating them!
Preheat the oven 180c
225g caster sugar
225g self raising flour
225g butter
teaspoon vanilla extract
4 eggs
for icing-
350g icing sugr
175g butter

Weight the butter- 225g

Mix the butter until sooth by hand or with a mixer

weight the caster sugar- 225g

Add the sugar to the butter gradually and mix

whisk four eggs and a teaspoon of vanilla extract in a separate bowl

Add the whisked eggs slowly into the butter mixture

it will look a bit like this...very runny

Weigh out the flour- 225g

Sift it into the mixture
Recipe || Victoria Sponge
Mix it all together until smooth

grease two round tins
Recipe || Victoria Sponge
put the mixture in the two tins equally
Recipe || Victoria Sponge
Put them in the oven

Cook for twenty minutes

once they are golden brown its time to take them out

Take them out of the tins while they are still warm it is much easier too get them out!and leave them to cool - 30mins to an hour

make the butter icing
Recipe || Victoria Sponge
put icing on one half and jam on the other and stick together 
Recipe || Victoria Sponge
Put butter icing on the top and decorateLaura x
