Recipe Swap: Crab Royale

I learned how to cook from my father, who learned how to cook from my great-grandmother, a chef in Miami – during a time when women weren’t chefs, mind you. I guess both of them contributed greatly not only to my culinary affinities, but for my ability to embrace non-standard roles. I started off as an aspiring writer with an unfortunate aptitude for math, ran off and joined the Army, traveled the world with camera in hand, and then I rediscovered fine cuisine. That rekindled my artsy side, and rather than abandoning my engineer-math-geek side, which I’ve grown to really love, I’ve found ways to mesh them. Problem solving requires creativity, and creativity thrives from continuous application.

And sometimes, it’s just plain fun.

We’re coming to a time that I’ve learned to look forward to in moves, when it’s time to cook up everything that’s left in the house so that the cupboards are empty by the time the movers arrive. It makes me look into all those refrigerator drawers and deep in the pantry for everything I’ve got, and then, starting with the ingredients, I build a meal around them. Sometimes it just takes a little digging in the recipe box, and other times I’ve got to get really creative. When I found a can of crab meat in my pantry, though, it was pretty easy, because I’d been craving this particular dish for a while!

Crab Royale

What you’ll need:

  • 2 cups crab, cooked and flaked
  • 1 cup shredded cheddar cheese
  • 1 rib celery
  • 2 tbsp bell peppers
  • 1/4 cup onion
  • 1/2 cup bread crumbs
  • 1/4 cup light mayonnaise
  • 1 tsp lemon juice
  • black pepper and salt to taste

How to make it:

  1. Chop the celery, bell peppers, and onion finely and mix together.
  2. Combine all of the ingredients in two bakeable pieces of serveware {we love these ceramics I bought for shepherd’s pie}.
  3. Bake 15 minutes at 350F or until lightly browned on top and heated through.
  4. Serve and enjoy!
