A few weeks ago lemons were on sale at the grocery store (5 for $1), so I scooped up a bunch and decided it was a good excuse to make some lemon-y treats. If your new year resolution(s) involved eating better and/or cutting back on sugar, you should probably stop reading now. If you didn’t make any health resolutions or if you’re pregnant/ breastfeeding and can afford a few extra calories, carry on….
Luscious Lemon Bars
Ingredients:
2 cups all-purpose flour
1/2 cup sifted powdered sugar
2 tablespoons cornstarch (I didn’t have cornstarch so I used 4 tablespoons flour instead)
1/4 teaspoon salt
3/4 cups butter
4 slightly beaten eggs
1 and 1/2 cups granulated sugar
3 tablespoons all-purpose flour
1 teaspoon finely shredded lemon peel
3/4 cup lemon juice
1/4 cup milk (I used nonfat)
Powdered sugar
Directions:
1. In a large bowl, combine the 2 cups flour, the 1/2 cup powdered sugar, cornstarch, and salt. Using a food processor, cut in butter until the mixture resembles coarse crumbs. Press mixture into the bottom of a greased 13x9x2 inch baking pan. Bake at 350 degrees for 20 minutes or until edges are golden.
2. Meanwhile, for the filling, in a medium bowl stir together the eggs, sugar, the 3 tablespoons flour, lemon peel, lemon juice, and milk. Pour filling over hot crust.
3. Bake for 15-20 minutes more or until center is set. Cool on a wire rack. Sprinkle powdered sugar over top and cut into bars. Cover and store in the refrigerator. Makes 36 bars!
