Chocolate and Hazelnut Nutella Surprise Cupcakes!
A couple of days ago when my cousins were here, we decided that it would be a really great idea to hold a 'Family Bake-Off' and whilst things definitely got a little over competitive, I'm pretty sure my sister was heard by all in a five-mile radius shouting 'We're DEFINITELY going to win', it was a really nice way to spend the afternoon together and try out some new and inventive recipes.
My team decided to make hazelnut-chocolate cupcakes in an attempt to try and win over the 'judges' and since you all seem to like my baking posts, I thought that I would share them over here. We used a normal chocolate sponge, baked them, dug out a well in the center and filled it with a teaspoon of Nutella before piping on a homemade recipe of butter icing (225g icing sugar, 80g butter, splash of milk and 80g nutella) and topping it all off with two little hazelnuts. All that was left after that was to tidy up the kitchen, since it looked like a bomb site, think pillows of flour and cake mix amongst dirty glass bowls.
We were pleasantly surprised with how well they turned out, and although we didn't win (it was a draw) it's definitely a recipe that I will be making again.
