Raw Goji Coconut Cake

Skincare cake? Absolutely! Raw Goji Coconut Cake is packed with antioxidants essential for healthy skin, nails and hair. This cake doesn't require baking at all. Simply throw these pure and delicious ingredients in a blender and enjoy fruitful results!

  1. Soak dates in hot water for about 10min.
  2. Place dates into a food processor and run until they are thoroughly chopped.
  3. Add almonds, pecans, 20g of goji berries and 1 tbsp. of coconut oil into a food processor and run until you get a smooth paste.
  4. Shape this paste on the flat surface and put it into fridge for 10min to harden.
  5. In the meantime, make a red layer by throwing 80g goji berries, vanilla extract, 1 tsp. coconut oil and cashews in the food processor and blend everything. Set aside.
  6. Take out the first "brown" layer from the fridge and place the red goji mixture on top of brown one. Put it back in the fridge.
  7. Make the last white layer by blending fresh coconut chunks with ½ tbsp. of coconut oil and 1tbsp.vegan honey
  8. Take out the 2-layer cake from the fridge and add the 3rd white layer on top. Put it back to fridge to harden for 10min.
  9. Take out the cake and cut it into square pieces (optional).
  10. Garnish squares with organic fresh mint.
