Raw Apricot Cashew Truffles
Ingredients
- 15 Organic dried apricots
- 25g Cashews
- 1/3 tsp. Vanilla extract
- 1tbsp. Coconut oil
- 1 tbsp. Fresh Orange Juice
- Shredded cashews
Instructions
- Soak dried apricots in hot water for about 10min.
- Place dried apricots into a food processor and blend until they are thoroughly chopped.
- Add other ingredients into a food processor and run until you get a smooth paste.
- Form paste into cute balls and roll them in shredded cashews.
- Place rolls in the fridge and let them harden.
- Enjoy the finished product with friends and family!
