I am not going to say much about the health benefits of ragi as you would have read about it in my previous posts.

This is an authentic recipe which is made with a mixture of ragi flour and rice flour.

After I prepared this dumplings, it reminded me of an all-time kid's favorite- chocos soaked in milk. To be frank these dumplings tastes better and is a healthy alternative for kids who loves chocos.

Step by step ragi paal kozhukattai recipe:

This ragi thengai paal kozhukattai recipe is very easy to make and hasn't veered away from the original Chettinad paal kozhukattai in terms of taste and health benefits.

Take required amount of ragi flour, rice flour, salt, sugar, water and milk in a bowl and mix it well. Take a kadai or non-stick pan and pour this batter and switch on the flame. In low or medium heat, keep stirring this batter continuously until it starts to leave the sides of the pan. Switch off the flame and add ghee.

Set aside the mix to cool down. When it is warm, grease your hands with a little ghee and knead it to soft pliable dough.
Make tiny balls out of the dough and keep it ready. If the balls are big it takes more time to be cooked. I used to prepare the ragi balls at night and refrigerate it as we all will be running out of time in the morning.

Now in a shallow pan, bring milk and sugar to boil. Once it boil, reduce the flame to low and add in ragi balls gently in the boiling milk and keep cooking them for 10 mins. Do not stir it for first few minutes as there is chance of breaking the ragi balls.

Now add in coconut milk, cardamom powder, stir it and turn off the heat. Do not boil after adding coconut milk. Allow it to cool. It will thicken as it cools down.

How to make fresh coconut milk?

Grind ½ cup grated coconut with 1/3 cup warm water and extract thick coconut milk. Again if you add more water to the already ground coconut, you will get thin coconut milk. You can also use ready made coconut milk.

Notes:

  • This dish can be given only to babies more than 1 year old. Don't give to babies who is less than a year old as this recipe is made with cow's milk and coconut milk.
  • Though this is ragi paal kozhukattai with sugar, you can make ragi paal kozhukattai with jaggery. As I ran out of organic jaggery, I preferred using brown sugar here. You can adjust the sweetness according to your kid's taste.
