Ragi (Finger Millet) Vermicelli Upma
In a pan,add 3 cups of water,little salt and oil and let it boil. When it starts boiling add the vermicelli and let it cook.
Cook for 1 & 1/2 to 2 Minutes max. DO not cook more than 2 minutes as it will get soggy.
Drain it and drain again with cold water. Add little oil to it and mix well. Keep aside.
In a pan,add ghee,when its hot,add asafoetida,cumin seeds,mustard seeds,curry leaves,broken byadgi chillies,mung dal split and mix well.
Let it cook for some time.When mustard seeds starts to crackle,add finely chopped tomato,and mix well.
Add little salt and mix well.
Cook till tomato is mushy.
Now add turmeric powder,sugar and salt as per your need.
Remember you have already added salt before.
Now add vermicelli ,grated coconut,cilantro and mix well.
Sprinkle little water with hand on this vermicelli.
Now bring the gas to sim,close the pan with lid and keep for 1 minute.
Switch off gas and cover the pan and let it sit for another 1 min before serving.
