1- Stuffed Peppers
What you need- Bell Peppers (Obviously) 2 small carrotsFew halved cherry tomatoesAny cheese of your choice; preferably soft. I love unflavored chèvre.Some leftover rice and leftover bread crumbsOlive oilSalt and PepperHerbs of your choice (Oregano, Basil etc. if you like)Process- Absolutely Simple!Preheat oven to 400 F and meanwhile mix all the ingredients (except the bread crumbs) together along with just a pinch of salt and pepper. Now slice the top of the peppers and remove the seeds if there are any. Now stuff them with the prepared mixture and seal with the bread crumbs. Now finish by drizzling little olive oil on the outside of the peppers and you are ready to roast. Place them on your oven tray and bake the same for about 20 min.
2. Creamy Basil Pasta
What you need- Spaghetti Pasta (Boiled) Cherry TomatoesLots of garlic (I love it)Fresh Basil (Chopped)Creme CheeseGoat Cheese or any soft cheese that is medium bodiedOlive oilSaltProcess- Start with boiling your pasta and keep it aside. It always makes sense to add few drops of oil to the boiling water for that way the pasta does not stick. Also, don´t over-boil. Every pasta packing gives instructions about the cooking time; read that.
Heat oil in a pan and add garlic. When it turns golden brown add chopped basil leaves. Now quickly add the tomatoes. When you notice the skins peeling off turn off the nob and keep aside.
Now in another or in same pan heat very little oil. When hot add both the cheeses and let them melt. Add some more chopped basil leaves so that the flavor gets well infused in the cheese mix as well. heat for about two minutes and add a little salt. You can also add pepper if its your spice. I even add fresh cilantro.
Now, spread the pasta on to your serving plate and pour the cheese mix on to it followed by the tomato and garlic mix. You are ready to serve or slurp!
