If you have been reading this blog for long, you know that I am a big fan of fats. I eat a lot of them – they are especially important while pregnant.
One of my favorite fat-loves is cream cheese.
However, it seems that it is usually paired with a cracker of some sort, and considering that almost every cracker is simply an ultra processed refined carbohydrate made with white flour and canola or soy oil, I don’t eat them.
I have found one of the simplest ways to become healthier is to simply substitute a vegetable or fruit in place of your usual bread or cracker.
So today, my “cracker” was a cucumber.
Topped with cracked pepper…perfect.
You could even make little “sandwiches” out of them for on-the-go snacking.
It also makes the cucumbers “go” a but further, as I am finding myself hungry about every 30 minutes (no lie folks, I grow big babies!).
Miles prefers just the cucumber, and I love the way he smells after eating them. Like a fresh, chubby little garden baby.
