Quick Meals: Tuna Pasta

I hardly ever have time to cook. Lunches are usually bought and dinner is the easiest thing that I can get my hands on which makes for an unhealthy diet. Luckily, my weight has not gone up but these days I'm more about being and remaining healthy as opposed to being obsessed about the scale. Tonight's dinner was tuna pasta...a yummy recipe that I got from my friend @ the last year of my twenties. You should check her blog out!
Quick Meals: Tuna Pasta
1 cup whole wheat pasta1 tin tuna (in water)1/2 a green bell pepper, chopped1/4 red onion, chopped3 cloves garlic, finely chopped1 tbsp black olives6 plum tomatoes1/4 cup garlic and tomato pasta sauceParmesan cheese Black pepper, salt, a tad bit of curry powder Extra Virgin Olive Oil
Now this was pretty simple. Boil pasta in salted water. While pasta is boiling, saute peppers, onions, garlic for about 2 minutes in EVOO before adding tuna. Add olives, pasta sauce and black pepper and curry powder and cook for 2 more minutes. Toss in cooked pasta and coat with tuna mixture. Turn off stove and toss in cherry tomatoes. Plate. Sprinkle on a bit of Parmesan cheese and enjoy! I'd say it makes 2 servings. The rest will be had for lunch tomorrow!
