Quick Dinner- Stewed Sausages

Have a package of sausage? Have some tomatoes? Maybe a few herbs? You have the makings for a delicious meal!

Ingredients:

4 spicy sausages
16 oz of tomatoes (I used smashed tomatoes from the freezer)
1 tsp Italian herbs
3 Tbs fish sauce
2 Tbs sherry or red wine
1 cup chopped mushrooms
1/4 cup chopped garlic and shallot/onion
Sprinkle of hot pepper (depending on how hot you like your food)
4 servings of spaghetti noodles (optional)
Salt & Pepper to taste

Directions:

Chop mushrooms, onion, and garlic.
Brown the sausages in the pan.
Remove the sausages from the pan and saute the onion and garlic in olive oil. Do not let the garlic brown.
Mix in mushrooms and cook until tender.
Stir in tomatoes, herbs, fish sauce, and sherry.
Let the sauce simmer for 3-5 min.
Add the sausages back in.
Simmer sausages in the tomato sauce (flipping and rotating them in the pan) for about 30 min.
As the sausage cooks, season the sauce to taste with hot pepper and salt.
Bring the pasta water to a boil.
Cook pasta until almost tender.
Remove the sausages from the pan and mix drained pasta into the sauce. Simmer the pasta until pasta is tender.
Serve sausages over the pasta and sauce. Garnish with fresh grated cheese if desired.
