Quick And Easy Toddler Lunch That Won't Make You Feel Like A Total Failure

By Guerrillamom @mariaguido
I've been whipping up a rendition of this pasta dish for my toddler for months. It's quick and easy - and it has protein and veggies and isn't out of a box or a color not found in nature.
Boil a cup of pasta. Follow al dente directions. Drain. Don't rinse!

On a saute pan over medium heat, melt a tablespoon of butter and about 2 tablespoons of milk, half and half or heavy cream (whatever you have in the fridge).
Slice some lunch meat - I use ham or salami - into strips or chunks or wedges or whatever your child likes. Throw that in the pan.
Put some of those "steam in bag" frozen peas in the microwave. I never steam them in the bag because I don't want to cook the whole bag at one time. I put a couple tablespoons in a ramekin, cover it with saran wrap, and microwave for 30 seconds. Throw the peas into the pan with the other stuff.
Let the peas, ham and butter simmer for a few minutes - throw in the pasta and toss. The whole thing will take you about 2 minutes (besides pasta cooking time)
Sprinkle some Parmesan over the top.
These measurements aren't really measurements, because I don't really measure anything. But it's a good eyeball.
