Use coconut oil for this recipe which enhances the flavour for this sweet pumpkin milk kootu recipe. Regular milk is used to make it. You can also use 50% coconut milk and 50% regular milk. If you are vegan, you can use coconut milk completely.

How to clean pumpkin?

Cut the pumpkin into pieces, discard the seeds and thread like flesh. Peel the outer skin and use the remaining flesh for kootu varieties or porridge or whatever you're gonna prepare.

Pumpkin is rich in fiber and keeps you feeling full for a longer time. So it is slow in digestion. Better to avoid consumption on nights.

how to make pumpkin paal kootu:

  1. Cut parangikai into pieces, discard seeds and thread like pulpy skin, peel of the skin ans wash well.
  2. Cut them into small pieces.
  3. Add 1 cup of water in a wok or pot, add required salt and chopped parangikai pieces.
  4. Cook covered for about 5 to 10 minutes. Check whether water is absorbed completely and pumpkin is cooked well.
  5. Once done, mix milk and rice flour together and add to the cooked pumpkin.
  6. Let it boil for 3 to 4 mins. Add ½ cup of shredded coconut. Mix well and turn off the flame.
  7. Heat a seasoning pan, add coconut oil. Add ½ tsp of mustard seeds. After it splutters add urad dal.
  8. When the urad dal is slightly golden, add red chilies , curry leaves and hing.
  9. Add the seasoning to paal kootu and mix well.
  10. Serve as a side dish with vathal kuzhambu or kara kuzhambu or urundai kuzhambu.
