Cream of broccoli soup recipe is loaded with a lot of vitamins, minerals and other nutrients. There is no cream added as the name mentioned. So you can fully enjoy the broccoli flavor in this vegetarian soup.

Broccoli is one of the vegetables which has lots and lots of healthy nutrients. While we are making it in a form of soup, it retains all the nutrients.cream of broccoli soup recipe is typically made with milk cream. I skipped the milk and cream. I prepared the grounded paste using broccoli, onion, garlic and pepper. Half part of broccoli , I sauteed and added to the soup to enjoy the crunchiness of broccoli in the soup recipe.

Variations for broccoli soup:

The basic version of the broccoli soup is made with onions and garlic but we can try variations with different ingredients.

Broccoli soup spicy version: Use some green chilies or red chili powder to spice up the soup recipe.

Cheese broccoli soup: in this soup also i have added grated cheese to garnish the soup. You can add cream cheese while cooking the soup to make it creamier.

Potato and broccoli soup: Addition of potato along with broccoli is a wonderful combination to enjoy.

Broccoli soup is best to serve on its own without sides. Here are some ideas to pair with soup. Breads: breads like plain or toasted or garlic bread are good to dip and enjoy the soup. 

Sandwich: while serving the grilled sandwich, you can pair the hot soup with it and make a satisfying meal for guests.

Salad: Have you tried serving the soup along with some fresh salads? If not, do try it and you will not regret the combo idea.

Croutons: croutons are an all time idea to go with any soups. You can use homemade or store bought croutons to top with the soup.

Roasted veggies: As like croutons, roasted vegetables are also a good choice to serve with soup.

Tips:

Choosing the right broccoli: while buying broccoli, choose vibrant green ones, not the pale yellow or soggy ones.

Chopping: Clean the broccoli by cutting the thick stems and cut the florets in equal sizes for even cooking.

Fragrance : To get the nice fragrance in soup, add butter while sauteing the onions and garlic.

For creamy soup: Add dairy products like milk, cheese or milk cream to get the creamier soup.

Reheat: If you are using the leftover or you prepared the soup sometimes before and you want to reheat the soup, reheat in low flame to medium flame. Because if you add dairy products, it will curdle and spoil the real taste of soup.

Ingredients to make broccoli soup:

Main ingredient: Use fresh and green colored broccoli 

To saute and grind: onions, garlic and capsicum are roasted in butter and grind along with broccoli.

Season: season the ingredients with butter or ghee to enhance the flavor and taste.

To garnish: grated cheese or croutons can be used to garnish the soup. You can also use any herbs like cilantro or parsley/

How to make broccoli soup:

  1. Clean the broccoli and cut into small florets.
  2. Heat enough water in a saucepan, once it starts boiling, add the broccoli florets, little turmeric and salt.
  3. Allow it to boil for exactly 60 secs(1 min). Not more than that.
  4. Drain the water using a siever.
  5. Heat a saucepan, add 1 tbsp of butter. To that add garlic, small onions and pepper.
  6. Saute for a min in low flame until the garlic starts changing the color.
  7. Now add chopped capsicum and saute well.
  8. To that add half portion of blanched broccoli and saute with little salt.
  9. Turn off the flame, cool the ingredients and grind to fine paste.
  10. In the same sauce , heat and add 1 tbsp of butter, add the remaining broccoli and give a quick saute.
  11. Add grinded paste along with enough water needed for the soup.
  12. Allow it to boil for 2 mins after adding the salt needed for the soup.
  13. Once it reaches desired consistency, turn off the flame.
  14. Serve hot topped with grated cheese.

FAQS:

Can we use frozen broccoli to make this soup?

Yes you can use both fresh and frozen ones to make the soup. But my choice is to use fresh veggies as we get full nutrients from the vegetables. Also for any situation you are using frozen broccoli make sure to thaw well before using it in soup.

My soup is not thickening, how can I make it thicker?

You are not using cream and not satisfied with the thickening of the soup. You can use Roux like we add in white paste. Heat enough butter and add some maida, roast in low flame and add it to the soup. It gives both texture and taste.

How to avoid the soup curdling after adding the dairy products like milk or cream?

Avoid boiling the soup after adding milk or cream. Just heat the soup, once you see the hot bubbles on the sides, turn off the flame.

What is the shelf life for broccoli soup recipe?

As I always said , make the recipes in needed quantities and serve them fresh. If you are planning to prepare the soup beforehand and you have any leftovers, Fill the soup in an airtight container and keep it in the refrigerator and serve within 12 hours. Make sure to reheat in low flame before serving.
