Potato Salad Made with Yogurt

Fresh potato salad egg and mayo free but just as creamy as made with fat-free greek style yogurt.

Ingredients:
1 Crushed garlic clove
1/2 tsp dried parsley
1/2 tsp dried herbs
pinch of salt
pinch of ground black pepper
Plain fat-free greek style yogurt (200-300mls)
potatoes (4-5 medium/large baby potatoes)

In a small mixing jug, add a crushed garlic clove, dried parsley, dried herbs, salt and pepper.

Stir in the yogurt and mix until fully combined.

Boil, peel and cut the potatoes up into small chunks

Stir in the yogurt mixture and viola! Healthy creamy potato salad with all the fat from the mayo and eggfee for you vegetarians!
