Hello all, how is weekend? I had a fun Makar Sankranti and I made sweets this time. Not only that we had a party last night. So, actually, I had indulged myself into a lot of unhealthy food in the last couple of days. Although, weekends generally mean some special dishes at my house, this time I wanted to go for a detox diet, without the use of any oil. And here is my Lunch recipe today, with Broad Beans & Sweet Potato Bharta and Beet-Tomato Soup.
Broad Beans & Sweet Potato Bharta:
Ingredients:250g broad beans chopped in medium sizes1 small sweet potato cut into cubes1 small onion3 pods of garlic1 tea spoon kalonji(onion seeds)1 dry red chilli1 green chilli1/2 cup chopped coriander leavesSalt
In a pan, roast the broad beans for sometimes till the sides get brown. Sprinkle some water and cover the lid to get it cooked. Boil the sweet potato cubes in another pan with some salt. Once the broad beans are cooked, toss with some salt. Keep the broad beans and sweet potato in a bowl to cool down. Meanwhile dry roast the onion, garlic, kalonji and red chilli in a pan till they become slightly roasted and you start getting the flavor. Now add the broad beans, Sweet potato,the dry roasted ingredients, coriander leaves and green chilli in the blender. Blend all to a paste. If required mix some salt. Your Bharta is ready.
Beet-Tomato Soup:
Ingredients:2 cups beet stalk( the leftover water you get from boiling beet)1 large tomato chopped in small cubes1/2 teaspoon black peppercorn1/2 teaspoon white pepper powder1/2 teaspoon garlic powderSalt
In a pot add the peppercorns and dry roast for a few seconds. Then add the chopped tomatoes and toss till it starts to become tender. Add the beet stock and keep on adding the white pepper powder, garlic powder and salt. Stir for sometime and take it from away from the gas. The soup is ready.
