This week I’ve baked some cute cupcakes and now I’m blogging the photos so you can have a go yourself at baking these afternoon-tea treats for the weekend.
These cupcakes look pretty standard (although I did take a long time decorating them because I was trying out my new piping bag that my brother bought me for my birthday) but do not be fooled - the topping is not what makes these cakes so special: it is the sneaky treat on the inside that makes them extra-tasty!
I chose to make a selection of flavours (coffee for mum, chocolate for hubby and vanilla for me!) and I followed my previous recipes for making sponge cakes – here’s my links for coffee buns, vanilla sponge and chocolate cake. I spooned the sponge mixtures into cupcake moulds and just before putting in the oven, I added a sweet treat to the center of each cake – chocolate coins for the chocolate buns, jelly beans in the vanilla cakes and a coffee-filled chocolate sweet in the coffee cakes. This is a great idea for using up left over chocolates and sweets from Christmas – I now only have a box of After 8′s left!
I baked the cakes as normal and iced them with buttercream, coffee flavoured butter-icing and for the chocolate topping I actually used Choccy Philly, which worked really well and was easy to pipe! Add a few sweets or sprinkles to the top et voila! Cupcake heaven with a surprise treat in the center
