Today’s recipe post is another which focuses on apples. To say that mom had a lot of apples on her tree is an understatement and they all needed using or preserving. As you know, last week I made apple and blackberry jam (here’s the recipe), and a flavoured vodka (which I have tested and it’s immense). Lucy from LucyLovesYa blog sent in her own apple scones recipe as part of the inspiration challenge and seeing her photo of these tasty treats (below) has inspired me to have a go at making them for myself.
Here’s the recipe I followed, which is for a cheese and apple scone (how nice does that sound?!): 300g self-raising flour, ½ tsp baking powder, 75g butter, 125g extra mature cheddar, 1 eating apple, 1 medium egg, about 100ml milk.
Mix the flour and baking powder in a bowl before adding the diced butter and use your fingertips to rub it into the flour until it resembles fine breadcrumbs. Add 75g of the grated cheese and 1 grated apple into the mixture. Crack the egg into a measuring jug and add enough milk to end up with a total of 150ml liquid. add the egg and milk mixture to the flour bowl and bring together with a knife to form a dough. Roll out the dough on a floured surface to around 2cm thick and use a biscuit cutter to cut out the scones and place onto a greased baking tray. Brush with a little extra milk and sprinkle the remaining grated cheese over the top. Bake at 200 degrees for 12-15 minutes until golden brown.
A second treat that hubby and I have been having a lot of this week is hot apple toddies. I love warmed apple juice, and they have started serving it in our local pub, so it must be the right time of year to start drinking it! We have come up with our favorite way to make spiced apple juice where we add two cups of apple juice into a saucepan and heat up before adding one chai teabag to infuse the juice. We also like to stir in some brown sugar or a spoonful of treacle, depending on which we fancy at the time, and add a teaspoon of mixed spice or ginger for an extra kick. I love this hot apple juice, but it’s even better if you’re tucked up at home and won’t be driving anywhere, because you can add a shot of dark rum to it!
