A new post again and this time I am sharing this wonderful recipe which brings back my childhood and college memories..It's Pickled Pineapple!

How many of you like me have eaten a snack while walking back home from school ? There were these few tiny shops near my school and after school on my way back home I along with few other friends of mine, used to eat these lip-smacking snacks or we can say fruits to be precise.
These were tiny shops,with lots of goodies,looking at which I am sure every kid must be drooling everyday.
There were these HUGE glass jars full of this transperant/watery liquid and lots of chilis and chopped fruits.I had tried Pineapple,Raw Mango and olives. Slurp!
In college and later when I was doing Master's , I still loved having pickled veggies/fruits and few other local snacks which I have been eating since childhood and enjoyed them.

It's been long since I had this thing on my mind to make these pickled pineapples. After a very time I could have these and it refreshed my memories and once again put them on top of my list.
So I got this huge Pineapple some days back and waited for it to be ripe.Not fully ripe but mostly on sweeter side.
So After cutting slices, I did a couple of combination of vinegar and water adding salt,sugar and chilies to see how I get that taste back.
For all of you who never tasted this, here it is what you will feel after your first bite: firstly you will have that taste of acidic vinegar flavor then you will experience sweet pineapple flavor and all of a sudden spicy chili will hit your mouth. That's a feeling of it's own!

I made this in two installments and few leftover Pineapple pieces I ate by sprinkling little,sugar,salt and chili powder.
After pickling these,I have refrigerated the jar,so that whenever I need I can take it out and gulp a piece.

Pickled Pineapple

Serves: 8 Prep Time: 8 Mins Cook Time: 5 Mins
Ingredients:
- 8 No, Pineapple Slices (Rounds cut into half)
- 1/2 Teaspoon,Salt
- 1/3rd Cup,Powdered White Sugar
- 3/4th Cup,Drinking Water
- 2/3rd Cup,White Distilled Vinegar
- 3 No,Green Chili,slit
- In a large sauce pan,add all the ingredients.
- Make sure you do not break the pineapple pieces.
- Now,cook this on medium heat for 5 Mins.
- Once it gets the first boil,switch off the flame.
- Let it cool completely before storing.
- In a sterilized glass jar,pour the contents without breaking the pieces.
- Keep it refrigerated.
- Enjoy whenever you feel like gulping a piece.

- This wont spoil if refrigerated even for months.
- So if you are a lover of pickled fruits like me then you can make in bulk and refrigerate them.
- If you want more or less spicy, then adjust the chilis.
- Also adjust the sugar level as per need.
