Pepper’s Coffee Cup Cakes Recipe!

I’ve had these really awesome silicone cups for a while and inspired by them I decided to make literal Coffee cup cakes.

They are cup cakes, they are in a cup and it looks like coffee, but also tastes like it too.

I added chocolate sprinkles to mine while the icing was wet for a fancy coffee look but you can add marshmallows or even use white icing to create a foamy look.

Here is my recipe!

Pepper’s Coffee Cup Cakes
Makes 8

For the cake
110g butter
110g caster sugar
110g self raising flour
1 teaspoon vanilla extract
2 free range eggs

For the icing
10 teaspoons milk, boiling
2 teaspoons instant coffee
200g icing sugar
A few chocolate sprinkles, optional


Method

Preheat the oven to 180oc.

Measure the butter and sugar into a medium sized bowl and cream until light and fluffy.

Add in the eggs a very small amount at a time and mix after each addition.

Once all the egg is added, add in the vanilla extract and stir in.

Lastly, add in the flour a bit at a time and stir until combined.

Fill up your cup cases with an equal amount of mix in each then place on a baking tray and cook for 15 minutes.

Place the cakes on a cooling tray and leave to cool.

To make the icing, take a jug and add in the instant coffee, then the boiling milk, stir until dissolved.
Add in the icing sugar and stir until combined into an paste.

Cut the tops off of the cakes to make them flat across the top then carefully spoon on the icing until it has covered the surface of the cake.

Add on the decorations of choice and leave the icing to dry.
