 Peanut(groundnut) Sundal

 

Peanut sundal is very simple, delicious, healthy protein rich treat with peanuts(groundnut) and coconut.

Peanut Sundal Recipe


Prep Time: 3 hrs soak     Cook time: 20 mins      Serves: 2

Main Ingredients: Peanut and coconutCourse: SnacksCuisine: South IndianLevel of cooking: Easy

Ingredients:

  • 1 cup Peanuts
  • 1 tablespoon Ghee
  • ½ teaspoon Mustard Seeds (small)
  • Few Curry Leaves
  • 1 Green chilli chopped (optional)
  • 2 Red Chili broken into 2 pieces
  • 2-3 tablespoon Grated coconut()
  • Rock salt (Sendha namak) to taste
  • 4 tablespoon grated green mango or to taste

Method: 1

  1. Soak the peanuts for 3 hours.
  2. Pressures cook it with salt and water just to immerse it for 3 - 4 whistles on medium flame.
  3. Allow the steam to escape using natural release method, (refer handy tip) before opening the lid.
  4. Drain and keep them aside.
  5. Heat the oil in a pan. 
  6. Add the mustard seeds and when the seeds splutter.
  7. Add the curry leaves, broken red chillies, grated green mango,green chilli and salt  to it and stir for a couple of seconds.
  8. Then add the boiled peanuts to this mixture and stir well.
  9. Remove from the flame, add the coconut and mix well.
  10. Serve immediately.

Method: 2

  1. Soak the peanuts for 3 hours.
  2. Heat the oil in a pressure cooker and add the mustard seeds.
  3. When the seeds crackle, add the red chilli, green chilli, curry leaves and grated green mango and sauté for a couple of seconds.
  4. Add the peanuts, salt and 1/2 cup of hot water and mix well and pressure cook on a medium flame for 3-4 whistles.
  5. Allow the steam to escape using natural release method, (refer handy tip) before opening the lid.
  6. Remove from the flame, add the coconut and mix well. Serve immediately.
