We all know we should have lots of fruits and vegetables in our daily meals. These nutrient rich foods may lower risk for certain health conditions such as obesity and heart disease. Eating any vegetables is good but do you know eating raw vegetables has some additional advantages over cooked vegetables?
Heating food destroys its nutrients and natural enzymes. Having vegetables raw can preserve the nutrients which boost digestion and fight chronic disease. You will get its nutritional perks. Most of the vegetables will be high in vitamins, minerals, fiber and phytochemicals.
Many raw foods are low in calories, fat and sodium and high in fiber. Having raw foods diet work for weight loss too.Peanut Noodles (Vegetarian)This peanut noodles are easy to prepare and go well with raw vegetables. If possible try to stick to real peanuts instead of peanut butter and you will taste the difference. It is kind of nutty, sweet and sour flavors. Since I’m serving to kids I used sweet chili sauce. Feel free to replace with hot sauce if you like. Add your choice of vegetables , or even some protein like tofu or chicken. Pay attention do not over-soften the noodles as it need to remain firm in order to mix well with all the veggies and peanut sauce.

Recipe from Vivian Pang's KitchenPeanut NoodlesIngredients~Dressing100g homemade peanut butter (can replace with smooth peanut butter)1 tablespoon sesame oil1 tablespoon light soya sauce2 tablespoons sweet chili sauce2 tablespoons lime juice4-5 tablespoons hot water (more if the peanut butter is thick)*Mix all ingredients in a bowl till well combined and set aside
~Salad250g egg noodles, blanched1-2 layers white cabbage, thinly sliced1-2 layers purple cabbage, thinly sliced½ carrot, shredded1 red big chili, deseed and thinly slicedHandful of coriander leaves, cut into length sizeHandful of toasted white sesame seeds
Method:1. Add blanched noodles, all the prepared raw vegetables and sesame seeds in a big mixing bowl.
2. Pour the peanut sauce all over the noodles and vegetables. Toss all to combine. 3. Garnish with some coriander, shredded chili and sesame seeds.
