I do love making new kind of bars using healthy ingredients I wouldn't normally put together, or almost combining to recipes into one like these peanut butter mishmash of granola and flapjacks! Keeping them dairy free means that I can have them as well, to be honest I think I gobbled them up within a week!
Now I know they are not child lunch box friendly due to the peanut butter, but as they have no actual added sugar, they are healthier and make perfect after school snack or a quick grab and go body fuel to keep you going til the next meal.
If you like the crunchy oaty to texture of a tracker bar then you will love these! The week I made these, I was having a bar during mid morning at work with a lovely warm cuppa, then another piece after the manic school run and sometimes even one during the evening after dinner! Now you are see why I almost consumed them all within a week.
I'm a huge peanut butter fan, smooth, crunchy even, I just love nuts. These Dairy free muesli bars have the right amount of peanut butter without being to peanuty. Adding they dark chocolate over the top just makes this generally healthy bar a little naughty! If you read the news, so many articles now about eating dark chocolate is not bad, but far healthy for moods and general well-being.
Ingredients
100g Oats
150g Muesli
125g Crunchy Peanut Butter
110g Honey
100g Dark Chocolate
In bowl add oats and muesli to a bowl and mix well.
In a small pan add honey and peanut butter and melt over medium heat
Pour the peanut honey mixture into the oats muesli mix, stir well until all the oats muesli mix is covered with honey peanut butter mixture.
Into a lined and greased oven tray add the oat muesli mixture
Using a little piece of greaseproof paper, press down the mixture evenly into the pan.
Bake in the oven at 180c for about 20 minutes or until the top goes a little brown.
Melt dark chocolate in the microwave by heating for 30 seconds at a time, stir and re heat until fully melted, then drizzle the chocolate over the muesli bar.
Allow the bar to cool and chocolate to set, ideally overnight.
Slice into a smaller pieces and enjoy.
