Another Creation ready for a healthy snack at a family day out in Legoland!
Ingredients:
60g Unsalted butter
60g Honey
480g Oats
100g Raisins
40g Chopped dried apricots
45g Desiccated Coconut
45g Pumpkin Seeds
80g Mixed Chopped nuts
50g Dried cranberries
30g Chopped almonds
30g Chopped dates
100g Peanut butter
130g Golden syrup
70g Light brown sugar
Heat butter and honey in a pan until melted
In a large bowl mix together the oats, raisins, dried apricots, desicated coconut, pumpkin seeds, chopped nuts, dried cranberries, chopped almonds and chopped dates.
Pour in the melted butter honey mixture and mix together. This will still be a fairly dry mixture, even spread on 2 baking trays and bake in the oven at 170c for 20 minutes.
While in the oven, stir every 7-8 mins to ensure it doesn’t burn or stick.
When nice and golden brown, remove from the oven and allow to cool slightly.
Pour the cooked granola back into the large mixing bowl..
In a pan add the peanut butter, golden syrup and brown sugar
Heat until all combined and melted.
Pour the peanut butter mixture over the granola and stir until all the granola is fully coated.
Press the granola mixture into a lined baking tray, pressing down firmly.
Allow to cool completely and turn out of the baking tray.
Slice into peices and enjoy!
